Crispy Tortilla Chips™ with Homemade Salsa
Ingredients

cans (14.5 ounces each) diced tomatoes
1
can (4 ounces) diced green chiles
1/4
cup thinly sliced green onion
1/4
cup chopped fresh parsley or cilantro
2
tablespoons lemon or lime juice
1/8
teaspoon pepper
1
clove garlic, minced
1/4
teaspoon salt, or to taste
Preparation:
Drain
tomatoes, reserving only 1/4 cup of the juice. Combine tomatoes and juice
with remaining ingredients; cover and chill at least 4 hours. Serve with
Pecker Crispy Tortilla Chips™. Makes about 2 1/2 cups. |

A
few extra ingredients can take everyday salsa from good to wow.
Ingredients

cup store-bought refrigerated salsa
1/4
cup sliced green olives, drained
1/4
cup corn kernels (frozen-thawed)
1/4
cup green onions (diced)
Preparation:
In
a medium bowl, combine the salsa, olives, onions and corn. You can try
other ingredients such as diced red onion, chopped cilantro or turn up
the heat with minced jalepenos. Serve with Pecker Crispy Tortilla
Chips™. |

Crispy Tortilla Chips™ with Guacamole
Ingredients

ripe avocados, seeded and peeled
1
tablespoon fresh lime juice
1/3
cup diced tomato, seeded and well drained
¼
cup chopped green onion
2
serrano chiles, chopped
¼
cup cilantro, chopped
½
teaspoon salt
Instructions
Cut
avocados into 1/2 inch cubes. Stir in lime juice. Fold in remaining
ingredients. Guacamole is best made as close to serving as possible. For
short-term storage, seal in an airtight container with a piece of plastic
wrap against the surface of the guacamole. Serve with Pecker Crispy Tortilla
Chips™. |

Banana Salsa
Ingredients

large firm banana, peeled and diced

cup red bell pepper, seeded diced

cup green bell pepper, seeded diced
1/2
cup yellow bell pepper, seeded diced

tablespoons chopped fresh cilantro

green onions, chopped
2
tablespoons fresh lime juice
1
tablespoon brown sugar
2
teaspoons minced fresh ginger root
2
teaspoons olive oil
1
teaspoon minced habanero pepper
salt
to taste
Instructions
Mix
together the banana, red pepper, green pepper, yellow pepper, cilantro,
green onion, lime juice, brown sugar, ginger, olive oil, and habanero pepper
in a bowl; season with salt. Serve within 1 hour. Serve with Pecker Crispy
Tortilla Chips™. |

Layer Speedy Tortilla Appetizer Recipe
Ingredients

sm. can refried beans
1
can bean dip
1
container guacamole dip
1
cup sour cream
1/2
cup mayonnaise
1
pkg. taco seasoning
shredded
Jack and cheddar cheese
1
can sliced black olives
3
sm. chopped tomatoes
2
bunches chopped green onion
Instructions
Mix
refried beans and Fritos bean dip; spread in bottom of small rectangular
baking dish. Next, spread guacamole dip. Mix sour cream, mayonnaise, and
taco seasoning; spread. Sprinkle cheese or cheeses to cover the third layer.
Sprinkle olives, tomatoes, and green onion in that order. Serve with
Pecker Crispy Tortilla Chips™. |
