Chocolate molds CAN NOT be
used for hard candy. The temperature of the hard candy mixture will melt
your molds. When purchasing chocolate don't confuse baker's chocolate,
which is unsweetened, with chocolate. There are two kinds of products
you can use in molding - real chocolate which is cocoa butter based, or
confectioner's coating (molding chocolate). Real chocolate requires tempering
and very careful temperature control. Confectioners coating (sometime
referred to as melts) can be just melted and used, but they aren't always
the highest quality chocolate. For the purpose of mold shapes and
suckers confectioners coating (melts) are the most durable and easiest
to use. You can use basic chocolate chips from the grocery store,
they may not hold the stick or be as durable as candy melts. |

Directions:
A really fast way to make
chocolate molded suckers is to use a Disposable
Pastry Bag. Fill it with the melts
or small pieces of chocolate, place it pointed end down in a glass measuring
cup and microwave on half power for 1 minute. Squeeze the bag. Continue
every few minutes until all chocolate is melted. |

| Insert the sucker sticks
in mold. Cut off the tip of the bag and fill up each mold cavity.
Using the bag makes clean-up really a snap and the left over chocolate
is easy to scrape off the bag.
Put the filled mold into
the freezer (on a flat surface). Small candies or bite size items will
be ready to remove in about 5 minutes; standard larger pieces in about
10. Leaving it in the freezer longer than necessary is no problem at all
(better too long than not enough!). You will know when the chocolates are
ready to be released by looking at the back side of the mold. The chocolate
will have pulled away from the mold slightly and the cavity will appear
grayish.
When you take the mold out
of the freezer grab the sucker stick and it should release - if candy piece
turn it upside down and gently tap it on the table. The candy should drop
right out. When piece is room temperature, place in bag and tie with
ribbon or twist tie. |
